Somewhere between graduating high school and where I am now, I have been lucky enough to cross paths with some of the greatest food scientists in the world. They have all directly or indirectly contributed to what I know and where I am today.
Dr. Fergus Clydsdale-U-Mass Food Science Department head 1987-2009
Dr. Mike Cirigliano-Unilever Food microbiologist (still there as far as I know!)
Dr. Andreas Keller-My manager at Unilever, now at the FDA (I think!)
Dr. Keith Ito -The greatest acidified food processing authority in the world
Ralph Blanchfield,MBE-A great food scientist and mad cow expert from the U.K.
Jerry Oliviera-Lab Director at Aemtek who has helped me through some complicated microbiology issues
Dr. Scott E. Martin-My graduate school professor/advisor at the University of Illinois
Eddie Schiffman-Fellow food science U-Mass graduate turned organic chemistry tutor who wrote an article about food science for the daily collegian in 1991 that confirmed I made the right decision to pick food science.
Ann Hall-My old boss at Kagome who gave me the freedom to be the R&D chef that I needed to be
Matt Steffans-Who gave me great advice and pep talks about the food science world back in 1991
Donna Hartley’s Husband-My first boss’s (donna hartley) husband, who’s name I don’t remember, told me about culinary school in 1996. The seed was planted right then and there.
